The Gavazi wine was created in the 17th century using Kakhetian technology with a secret royal recipe. The union of Rkatsiteli, Mtsvane, Kisi and Khikhvi, the four most important grape varieties of Kakheti, was a special creation for the royal family. The Kakhetian king Teimuraz (1606-1648) particularly loved this wine. The character and taste is characterized by the traditional and unique manufacturing technology. The Rkatsiteli qvevri of Kapistoni comes from the Manavi microzone of the Kakheti region. This high quality wine is rich in aromas, with notes of pears, peaches, citrus, cream and honey dominating.

This Qvevri wine from the Gurjaani region in Kakheti is made from the old Rkatsiteli grape using an ancient Georgian traditional method. The mashed grapes, together with the skin and seeds, are placed in large clay vessels, the qvevris, which are buried underground. This allows the wine to mature in its natural condition for 6-7 months.

Rkatsiteli Reserve Qvevri by the family vineyard Tchotiashvili

Tchotiashvili only uses grapes from their own vineyards in Saniore, Kakheti region. "Limited Reserve" stands for a small quantity of the best sample of a particular vintage. Each bottle is subject to strict control and may only be sold after signature by the winemaker. The quantity is limited, each bottle has its own unique number. Rkatsiteli Reserve is a Qvevri wine produced with traditional Kachetian technology. The maceration lasts 7 months in Qvevri on full grape skins with pips and stems. Sulphites (SO2) are only used to disinfect the Qvevri. The Rkatsiteli vines are over 40 years old, located at the bottom of the Caucasus up to 480m above sea level. The soil has a light mechanical structure (Cordier carbonate sandy soil) and does not require watering.

The Rose Rkatsiteli Qvevri wine from the Gurjaani region in Kakheti is made from a unique Georgian aboriginal grape variety rosé Rkatsiteli. The process takes place with Kakhetian traditional technology in qvevri, which includes fermentation with full contact of skin and stem. The wine in qvevri is aging for 6-7 months.

Alazani Valley, medium sweet white wine from Kakheti by Winery of the Future

The Alazani Valley extends over large parts of Kakheti. The grapes of the type Rkatsiteli are harvested at optimum ripeness by hand. The fermentation takes place in a stainless steel tank. When the optimum sweetness and acidity are reached, the fermentation is stopped by cooling.

The Rkatsiteli and Mtsvane grapes are picked by hand at the peak of ripeness. After the stems have been removed, the grapes are gently squeezed in a pneumatic press. The purified self-extracted juice is fermented in a stainless steel tank at a specified temperature (15-18°C). After fermentation, the wine is transferred to another tank for further aging.
