Marani Satrapezo red ice wine from Cabernet Sauvignon

The precious juice of ice wine is obtained from grapes exposed to the rigors of winter, at temperatures of at least -8°C. It takes time, patience and the fortune of the winemaker to play with nature. At these temperatures, the water in the grape berry separates from the sugar, aroma and acidity. The water freezes and crystallizes, leaving the other components as hanging drops of liquid along the ice crystals. At the beginning of december in the Kondoli vineyard in Kakheti, when the temperature has dropped to -9°C, the fully frozen grapes are hand-picked early in the morning in small boxes and sorted by hand at the winery. The fermentation is carried out for 2 months in stainless steel tanks at controlled temperature. After fermentation, the wine is stored for 6 months cool at about 0°C. A slight filtration takes place before bottling.

The Marani Reserve, only from the best vintages

An extraordinary wine created in small quantities presents its potential, longevity and outstanding quality. The Marani Reserve 2007 is the first of its class by Marani. A unique red wine made from hand selected Saperavi with minimal intervention during and after the fermentation. In selected blocks of the Kondoli Vineyard in Kakheti grapes are harvested green in early August at the bottom of the vines. This reduces the yield to less than 5-6 t/ha. It leads to the improvement of the quality and concentration of the remaining fruits. At the end of september, the ripe grapes are hand-picked in small boxes and sorted by hand at the winery. The fermentation takes place in open 225L oak barrels, followed by maturation in closed oak barrels and unfiltered botteling.
