Original Khvanchkara from Marani

Khvanchkara is a village in Racha, west of the city Ambrolauri. The grapes of the varieties Alexandreuli and Mujuretuli are harvested by hand from the end of october to the beginning of november at the optimum of maturity. The fermentation takes place in a stainless steel tank. When the optimum sweetness and acidity are reached, the fermentation is stopped by cooling.
